So these fish from 🇯🇵 came this week are very spec So these fish from 🇯🇵 came this week are very special to me! *Akamutsu - Black throat perch. A deep sea dweller, very high fat content for a white fish. Extremely tasty! *Ina-saba - Japanese mackerel that must follow strict standards to be sold to the market. *Shirako - Cod Milt. Hear me out it’s weird but it’s a delicacy in japan. It’s super delicious packed with proteins and vitamins. Please enjoy this weeks fish! 🙇‍♂️

Sawara is a tane that falls somewhere between hikarimono (silver skinned, shiny fish) and shiromi (white fish). The best sawara is caught off the coast of Japan in the winter time. It is then called kan sawara (寒鰆) and is at its peak level of fat, with soft, almost flaky texture and great umami flavors. . itadakimasu!🙏 🙇‍♂️
